The Daily Bake: Banana Cupcakes with Cream Cheese Frosting and Coconut Flakes
Yet another yummy creation… For the frosting, I followed the same recipe from the cream cheese frosting recipe I found with the raspberry cupcakes. I then added some flaked sweetened coconut on top and a slice of banana. Not only does the slice of banana look nice on top, it makes for a fresh and sweet combo with the icing and coconut. These are best when cold after being in the fridge for a while. The cupcakes are almost like banana bread too-wholesome and filling. The perfect dessert for any banana lover! Makes about 24 cupcakes.
